Coffee - Phoenix Plantation

Wild harvest coffee refers to coffee cherries gathered from naturally growing coffee trees rather than large commercial plantations. In many parts of Vanuatu, coffee plants grow freely along village gardens, forest edges, and older homesteads where they have thrived for years in rich volcanic soil.

These small harvests are picked by hand when the cherries are fully ripe, then sun-dried and processed in traditional ways. Because the trees grow naturally among other tropical plants, the coffee often develops deeper, more complex flavours with earthy, chocolate and nutty notes.

Wild harvest coffee is produced in small batches and reflects the land it comes from. Each harvest supports local village growers who collect and prepare the beans using simple, sustainable methods passed down through generations.
