Our pepper is cultivated using traditional island farming methods and harvested in small batches to preserve its natural oils and bold aroma. HOW TO USE
Grind whole peppercorns fresh in a pepper mill to release their full aroma and flavour. Freshly ground pepper enhances meats, seafood, vegetables, soups, sauces, and salad dressings.
Peppercorns can also be lightly crushed using a mortar and pestle to create a coarse seasoning for steak rubs, barbecue blends, and marinades.
Grinding just before cooking releases the natural oils in the pepper, producing a stronger and more aromatic seasoning than pre-ground pepper.

Pepper Garlic Marinade
Ingredients
2 teaspoons freshly cracked Aore Island black pepper
3 cloves garlic, crushed
3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon sea salt
Method
Mix all ingredients in a bowl. Coat chicken, fish, or vegetables and allow to marinate for 20–30 minutes. Cook on a grill, barbecue, or pan until done. Finish with a light grind of fresh Aore Island pepper before serving.
Works well with grilled fish, chicken, vegetables, or prawns.
