    Roasted Nangai Nuts


    Nangai nuts are one of the South Pacific’s most prized wild foods. Found in Vanuatu’s coastal forests, these rich, buttery nuts have been eaten by island communities for generations. Once roasted, the shell cracks open to reveal a smooth, creamy nut with a flavour similar to macadamia but slightly more earthy and aromatic.

    Naturally high in healthy oils, plant protein and essential minerals, nangai nuts are a nourishing snack that provides lasting energy. They are often enjoyed simply roasted over a fire, but they also work beautifully in salads, cooking and baking.

    Because Nangai is wild harvested and seasonal, each harvest is gathered by hand from village trees and processed in small batches.

    Simple Island Roasted Nangai Recipe


    Ingredients


    2 cups raw Nangai nuts in shell


    Sea salt (optional)

    Method


    Heat a pan or roasting tray over medium heat.

    Add the whole Nangai nuts and roast for 10–15 minutes, turning occasionally.

    As they heat, the shells will begin to crack open.

    Remove from heat once lightly golden and fragrant.

    Let cool slightly, then crack the shell and remove the nut.

    Sprinkle with a little sea salt if desired.

    Serve warm as a snack, add to salads, or chop and sprinkle over vegetables and rice dishes.
