When the Murray family first set foot on Aore Island, they saw more than a tropical haven  they saw potential. The land was wild, fertile, and deeply connected to the rhythms of nature. From this soil, Phoenix Plantation was born  a project rooted in legacy, sustainability, and the enduring dream of one man who envisioned a simpler, purposeful life in the islands of Vanuatu.


The Birth of a Dream

Phoenix Plantation began as the personal vision of a man named Phoenix  a man who wanted to step away from the hustle of modern Australia and create something lasting. He dreamed of a life where days were measured not by deadlines, but by harvests. His goal was to build a self-sufficient agricultural hub that could grow vanilla, cocoa, and pepper  three of Vanuatu’s most prized crops  while supporting local communities and preserving traditional methods.

Tragically, Phoenix passed away before seeing his dream realised. His mother, driven by his vision and guided by the belief that legacy is built through action, chose to continue what he started. They named it Phoenix Plantation  a symbol of rebirth, hope, and perseverance.

Set against the backdrop of crystal-clear waters and tropical forest, Phoenix Plantation represents more than agriculture. It’s a story of renewal how one family transformed loss into purpose. Today, the plantation is a growing enterprise focused on organic vanilla farming, pepper cultivation, and sustainable cocoa production.

The soil on Aore Island is naturally rich in minerals, making it ideal for tropical crops. Vanilla Farming in Vanuatu

Vanilla is one of the world’s most labour-intensive crops, and Vanuatu’s tropical climate provides the perfect conditions.
